Applebee's Blue Moon Beer Cheese Dip

Ingredients

  • 1 ½ cups of Vermont Sharp White Cheddar (Boar’s Head, pref.), freshly grated
  • 1 ½ cups of Parmesan cheese, freshly grated
  • 2 TBL bleu cheese
  • 3 TBL unsalted butter
  • 1 + bottle of Blue Moon beer or a light, wheat beer
  • 1 ½ cups heavy cream
  • ½ tsp. Worcestershire
  • 2-3 dashed of Crystal Hot Sauce
  • Pinch garlic powder
  • Pinch white pepper
  • Pinch sugar
  • Pinch Kosher salt
  • Corn starch for thickening.

Instructions

In a large sauté pan, on a medium heat, bring 1 bottle of Blue Moon to a simmer for 3 minutes.  Whisk in the heavy cream, Worcestershire, garlic powder, white pepper, sugar and kosher salt.

Make a cornstarch slurry with 2 TBL of cornstarch and 1/3 bottle of Blue Moon.  On a medium-high heat, slowly add the slurry in a thin stream just a bit at a time.  Constantly whisk the mixture, as the sauce thickens, until the desired thickened consistency.

Continuing to constantly whisk, add the butter, cheddar cheese, parmesan, bleu cheese and Crystal Hot Sauce until all the cheese is completely melted.  The sauce is ready to serve once it sticks to the back of a spoon.
