Ingredients

  • Ingredients:
  • 16 oz. Velveeta Queso Blanco, cubed
  • ½ cup milk
  • 7 oz. can of Hatch chili peppers, diced and drained
  • *tip: you can use canned green chilies or canned Anaheim peppers if you can’t find Hatch peppers.
  • ½ tsp. cumin
  • ¼ tsp. cayenne
  • Pico de Gallo Ingredients:
  • 1 large, firm Beefsteak tomato, ¼” dice
  • 1 small yellow onion, ¼” dice
  • ½ cup cilantro, chopped
  • 2 large fresh jalapenos, minced
  • 1 large garlic clove, grated
  • 1 lime, juiced
  • Pinch Kosher salt
  • Pinch sugar

Instructions

Mix all Pico de Gallo ingredients and refrigerate. *Tip: the Pico de Gallo makes extra to enjoy with chips. Two appetizers in one!

In a medium sized sauté pan, on a low heat, add milk and Velveeta. Stir frequently while the cheese is melting to prevent burning. Once cheese is melted, add the chilies, cumin, and cayenne. Mix well, scoop Queso into a serving dish and top with Pico de Gallo.
