Ingredients

  • For the Chicken Filling:
  • 2 cups cooked and shredded chicken (grilled or rotisserie works best)
  • 1 cup Mexican-blend cheese
  • 1/4 cup cream cheese
  • 1/4 cup heavy cream
  • 1 TBL. EVOO
  • 2 TBL. onion, finely diced
  • 1 TBL. red bell pepper, finely diced
  • 1 TBL. jalapeño, finely diced
  • 1 med. garlic clove, minced
  • 1 tsp. paprika
  • 1/2 tsp. cayenne pepper
  • 1 tsp. salt
  • 1/4 tsp. cracked black pepper
  • 2 TBL. water
  • 5 flour tortillas (7-inch size)
  • For Frying:
  • 2 cups vegetable oil (for frying)
  • For Serving (optional):
  • Chopped Romaine lettuce
  • Chopped Roma tomato
  • For the Firecracker Sauce:
  • 1 large, ripe avocado
  • 1/2 cup sour cream
  • Juice of 2 limes + zest
  • 1/2 tsp. sugar
  • 1/2 tsp. garlic powder
  • 1/2 tsp. kosher salt
  • 1/4 tsp. onion powder
  • 1/4 tsp. ground cumin
  • 1/8 tsp. cayenne pepper

Instructions

Make the Firecracker Sauce:
In a small food processor, add all the ingredients and puree until smooth.
Cover and refrigerate while preparing the wraps.

Prepare the Chicken Filling:
In a medium-sized skillet, add 1 tablespoon of extra-virgin olive oil. Once the oil begins to shimmer, add the onions, peppers, and minced garlic and sauteed until softened. Add 2 tablespoons of water and cook until evaporated.

Add the paprika, cayenne, salt and black pepper. Stir in the chopped and cooked chicken and combine well.
Turn the heat down to the lowest setting; add the cream cheese, heavy cream, and shredded Mexica-blend. Mix well until all ingredients are fully incorporated. Remove from heat.

Assemble the Wraps:
Lay a tortilla flat and place about two 2-ounce scoops of the chicken mixture in the center.
Fold in the sides, then roll tightly into a small burrito- shape, and pin closed with a toothpick.
Repeat with the remaining tortillas and filling.

Fry the Wraps:
Heat vegetable oil in a deep pan over medium-high heat (350°F).
Fry the wraps in batches, turning occasionally, until golden brown and crispy (about 3-4 minutes per side).
Remove and drain on a paper towel-lined plate.

Serve:
Scatter chopped romaine lettuce and chopped tomatoes on a serving plate. Place the Avocado Lime Dip in the center of the plate.
Slice each wrap diagonally and serve immediately.
