The Delectable Delight of Seasons 52’s Lobster Flatbread Recipe

Welcome to my cozy corner of the web, where today, we’re all about indulging in the finer things while keeping it utterly fresh. And speaking of fresh, let’s chat about Seasons 52 and their absolutely to-die-for Lobster Flatbread. It’s a culinary experience that has foodies singing from the rooftops.

Freshness at its Peak: The Seasons 52 Story

Seasons 52 is the restaurant that brought “seasonal” dining into our lexicon long before it was a hashtag on Instagram. It is a refreshingly unique concept in the crowded restaurant space and is as simple as it is revolutionary: serve up dishes that harness the flavors of the season. With a menu that changes—yep, you guessed it—seasonally, they’ve turned the dining experience into a celebration of what’s fresh, what’s ripe, and what’s oh-so-flavorful right now. And the best part? They manage to keep everything under 475 calories, making indulgence feel almost… responsible.

More Than Just a Meal: The Culture of Seasons 52

At Seasons 52, it’s clear they believe dining out should nourish more than just your body. It’s a holistic experience. The ambiance, the service, and of course, the meticulously crafted menu all work together to create a dining experience that delights all the senses.

The restaurant is a proud champion of the farm-to-table movement. They are serious about delivering not just a meal, but a culinary experience that you can feel good about. It’s guilt-free indulgence at its finest. And with a nod to the planet, Seasons 52 is all about sustainability. They curate their menu around what’s available seasonally, which means the ingredients are not only at their peak of flavor but also environmentally friendly. You can savor that Lobster Flatbread knowing that the ingredients had a short field-to-fork journey, keeping their carbon footprint smaller than a sea turtle’s.

The Star of the Show: Lobster Flatbread

But let’s get to the good stuff—the Lobster Flatbread. It’s like the ocean took a vacation on a piece of artisan bread. This isn’t just flatbread; it’s a canvas where the ocean’s bounty meets a harvest of garden freshness. Every bite is a mingle of the lobster’s subtle sweetness with a hint of cheese that’s just rich enough to make your heart sing, but not so heavy that it drowns out the lobster’s delicate notes. But it’s not just about the lobster and cheese. Oh no. There are the sweet, roasted red peppers and a drizzle of lemon cream that make each bite a discovery. And let’s not forget the subtle kick of scallions that remind you, with each mouthful, that there’s a party happening on your palate.

Perfect for Entertaining

I love to entertain!  Entertaining  is my love language and a wonderful way to spend quality time with friends and family.  It seems almost every weekend, we have some sort of gathering.  But entertaining can also be a lot of work, time and clean up.   Discovering easier ways to entertain is a great compromise between spending time with loved ones and reducing the effort required to entertain.  Sometimes, the best plan is to have several couples over for drinks and appetizers.  Appetizers, generally, take less time and effort to prepare and clean up is made easier by using fewer plates.  Try pairing the Lobster Flatbread with Seasons 52  Garlic & Pesto Chicken Flatbread.  Perfect!

The Lobster Flatbread is one of my favorite recreations. The tender lobster chunks bring the WOW factor and the cream drizzle and lemon zest creates a perfect balance of flavors. The Brooklyn Bred flatbread crusts are the best size, consistency and texture and are the closest to Seasons 52 that I have found. You can use jarred roasted red peppers, for a time saver, but I definitely recommend roasting your own red peppers, either on a grill or under the broiler. I prefer the texture and flavor of home roasted peppers.

Now get to it!

Roll up your sleeves, preheat your oven, and get ready to layer on the flavors. You’re not just baking flatbread; you’re crafting an experience, one that brings the spirit of Seasons 52 right into your home. Here’s to delicious discoveries and to meals that taste like moments to remember!

Ingredients

  • 1 pack (2 pieces) of Brooklyn Bred flatbread crusts-6x13 inch rectangular
  • 2 3-ounce cold water lobster tails, shell on
  • 4 oz. fresh mozzarella, finely grated
  • 4 oz. fresh parmesan, finely grated
  • 1 red bell pepper
  • 2 oz. scallion, green part only, and slivered
  • 2+ TBL. EVOO
  • 1 lemon for testing
  • LOBSTER-CREAM SAUCE DRIZZLE
  • 1 cup sour cream
  • 2 dashes Old Bay Seasoning
  • 2 squirts of Dijon mustard
  • 2 dashes of a Chipotle-flavored hot sauce
  • *mix all 4 ingredients well and refrigerate until ready to use

Instructions

On a cookie sheet, Brush each flatbread crust with 1 TBL of EVOO and set aside.

Remove lobster tails from shells and discard shells. Poach lobster in shallow, simmering water for approx. 1-2 minutes until tails curl slightly and meat turns reddish-pink. Remove from water, place on cutting board and cut the poached lobster into ½ inch pieces.

Coat the red pepper in EVOO and set on a hot gill. Grill the red pepper until the skin is charred and blistered. Leaving the skin on the pepper, remove seeds, stem and ribs and cut into ¼ inch dice.

Top EACH flatbread in this order: 1 oz. parmesan, 1 oz. mozzarella, 3 oz. lobster chunks, 1 oz. diced peppers, 1 oz. parmesan, 1 oz. mozzarella

Bake the flatbreads directly on center rack at highest heat temperature possible until the crust is crisp, and the cheese is slightly bubbly.

To finish: sprinkle each flatbread with slivered scallions, drizzle with the lobster cream sauce and zest the top of each flatbread with lemon. Cut each flatbread into 4 triangles.
