I love to entertain! Entertaining is my love language and a wonderful way to spend quality time with friends and family. It seems almost every weekend, we have some sort of gathering. But entertaining can also be a lot of work, time and clean up. Discovering easier ways to entertain is a great compromise between spending time with loved ones and reducing the effort required to entertain. Sometimes, the best plan is to have several couples over for drinks and appetizers. Appetizers, generally, take less time and effort to prepare and clean up is made easier by using fewer plates. Try pairing the Lobster Flatbread with Seasons 52 Garlic & Pesto Chicken Flatbread. Perfect!
The Lobster Flatbread is one of my favorite recreations. The tender lobster chunks bring the WOW factor and the cream drizzle and lemon zest creates a perfect balance of flavors. The Brooklyn Bred flatbread crusts are the best size, consistency and texture and are the closest to Seasons 52 that I have found. You can use jarred roasted red peppers, for a time saver, but I definitely recommend roasting your own red peppers, either on a grill or under the broiler. I prefer the texture and flavor of home roasted peppers.
Ingredients
- 1 pack (2 pieces) of Brooklyn Bred flatbread crusts-6x13 inch rectangular
- 2 3-ounce cold water lobster tails, shell on
- 4 oz. fresh mozzarella, finely grated
- 4 oz. fresh parmesan, finely grated
- 1 red bell pepper
- 2 oz. scallion, green part only, and slivered
- 2+ TBL. EVOO
- 1 lemon for testing
- LOBSTER-CREAM SAUCE DRIZZLE
- 1 cup sour cream
- 2 dashes Old Bay Seasoning
- 2 squirts of Dijon mustard
- 2 dashes of a Chipotle-flavored hot sauce
- *mix all 4 ingredients well and refrigerate until ready to use
Instructions
On a cookie sheet, Brush each flatbread crust with 1 TBL of EVOO and set aside.
Remove lobster tails from shells and discard shells. Poach lobster in shallow, simmering water for approx. 1-2 minutes until tails curl slightly and meat turns reddish-pink. Remove from water, place on cutting board and cut the poached lobster into ½ inch pieces.
Coat the red pepper in EVOO and set on a hot gill. Grill the red pepper until the skin is charred and blistered. Leaving the skin on the pepper, remove seeds, stem and ribs and cut into ¼ inch dice.
Top EACH flatbread in this order: 1 oz. parmesan, 1 oz. mozzarella, 3 oz. lobster chunks, 1 oz. diced peppers, 1 oz. parmesan, 1 oz. mozzarella
Bake the flatbreads directly on center rack at highest heat temperature possible until the crust is crisp, and the cheese is slightly bubbly.
To finish: sprinkle each flatbread with slivered scallions, drizzle with the lobster cream sauce and zest the top of each flatbread with lemon. Cut each flatbread into 4 triangles.
